1 rack of lamb, frenched (about 1.5–2 lbs)
2 tbsp olive oil
4 garlic cloves, minced
1 tbsp fresh rosemary, chopped
1 tsp fresh thyme leaves
1 tsp sea salt
½ tsp black pepper
1 tbsp lemon juice (optional)
Instructions
- Preheat your grill to high heat.
- In a small bowl, mix olive oil, garlic, rosemary, thyme, salt, pepper, and lemon juice.
- Rub the mixture all over the rack of lamb. Let it sit at room temperature for 30 minutes.
- Place lamb fat-side down on the grill and sear for 2–3 minutes.
- Flip and move to indirect heat. Grill until internal temperature reaches 125°F (medium-rare), about 15–20 minutes total.
- Rest for 10 minutes, then slice between the bones and serve.
