Ingredients

1 rack of lamb, frenched (about 1.52 lbs)

2 tbsp olive oil

4 garlic cloves, minced

1 tbsp fresh rosemary, chopped

1 tsp fresh thyme leaves

1 tsp sea salt

½ tsp black pepper

1 tbsp lemon juice (optional)

Instructions

  1. Preheat your grill to high heat.
  2. In a small bowl, mix olive oil, garlic, rosemary, thyme, salt, pepper, and lemon juice.
  3. Rub the mixture all over the rack of lamb. Let it sit at room temperature for 30 minutes.
  4. Place lamb fat-side down on the grill and sear for 2–3 minutes.
  5. Flip and move to indirect heat. Grill until internal temperature reaches 125°F (medium-rare), about 15–20 minutes total.
  6. Rest for 10 minutes, then slice between the bones and serve.
