Ingredients
1½ pounds boneless, skinless chicken breasts (cubed)
2 cups frozen or fresh mixed vegetables (peas, carrots, corn)
1 cup cream of chicken soup
½ cup milk
1 cup shredded cheddar cheese
½ cup French-fried onions (for topping)
1 tsp dried thyme
Salt and pepper to taste
Optional: cooked pasta or rice as a base
Instructions
- Preheat oven to 350°F (180°C).
- In a large skillet, sauté the chicken and vegetables until chicken is no longer pink.
- In a bowl, mix the cream of chicken soup, milk, cheddar cheese, thyme, salt, and pepper.
- In a 9×13-inch baking dish, layer half the chicken and veggie mixture.
- Pour half the soup mixture over it, then repeat the layers.
- Top with French-fried onions.
- Bake for 25–30 minutes, or until golden and bubbling.
