Ingredients
3 cups cooked chicken breast, chopped or shredded
6 slices cooked bacon, chopped
1 cup cherry tomatoes, halved
4 cups chopped romaine or mixed lettuce
1/4 cup red onion, thinly sliced
1/2 cup shredded cheddar or mozzarella (optional)
1/3 cup plain Greek yogurt
1/4 cup mayonnaise
1 tablespoon lemon juice
1 teaspoon Dijon mustard
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
- In a small bowl, whisk together yogurt, mayonnaise, lemon juice, mustard, garlic powder, salt, and pepper to make the dressing.
- In a large salad bowl, combine chopped chicken, bacon, tomatoes, lettuce, red onion, and cheese.
- Pour the dressing over the salad ingredients and toss until well coated.
- Serve immediately or chill for 15–20 minutes before serving for better flavor.
